In our family, impasto embodies both our Italian roots and the finesse drawn from the French tradition, creating a bridge between two cultures that share a deep respect for quality and craftsmanship.
For generations, the Villani family has followed a method passed down through trial and error, refined over time. This long, slow process allows the wheat, flour, water, salt, and fermentation to develop their full potential, producing bread with unparalleled structure and flavour.
